Strawberry and Radish Salad with Green Superfood Dressing

This radish salad is so much fun to make and full of amazing textures. A bed of greens is topped with crunchy pink radish, sweet strawberries and tomatoes, flavourful sauerkraut, and a handful of activated walnuts. The dressing is oh-so-creamy and mouthwatering using cashews as the base. Now, what exactly makes this a superfood dressing and gives it its beautiful unique colour? The epic spirulina!

Spirulina is a fresh water, blue-green algae plant with many incredible health benefits. This is because it contains an array of important nutrients and antioxidants, including complex carbohydrates, iron, and vitamins A and K, as well as B complex. It’s also rich in chlorophyll, fatty and nucleic acids, and lipids. Spirulina is also rich in gammalinolenic acid, or GLA, a compound found in breast milk that helps develop healthier babies.

Spirulina is well known for its rich protein content, about 60% of spirulina’s dry weight is protein, which is essential for growth and cell regeneration. It’s an excellent plant based replacement for fatty animal products. It also helps prevent macular degeneration as it contain beta carotene that is 10 times more concentrated than carrots. Spirulina increases energy and improves exercise performance. It increases fat burning during exercise and its high antioxidant content helps reduce oxidation which results in muscle fatigue. On top of that, spirulina safely and effectively removes mercury and other deadly toxins from the body.

  1. Grab your favourite salad bowls and fill them with the salad ingredients.
  2. Blend the dressings ingredients until super smooth and creamy.
  3. Pour over the salad, mix in, and enjoy!
  4. Left over dressing will last in the fridge for 2 days.
