It is Spring here in Brisbane. The sun is out and the flowers are blooming. I’ve created a colourful and vibrant salad that represents spring, and I want to share it with you because well… it’s super delicious!

I want to mention that it incorporates a very powerful herb – cilantro (coriander). It is effective for toxic metal cleansing. The chemical compounds in cilantro bind to toxic metals and flush them out of the body. It has a strong antioxidant content, controls blood sugar, lowers anxiety, and improves digestion. Cilantro has a yummy almost citrus-like flavour, so feel free to add as much as you want to this salad.

Fresh greens

Sweet tomatoes

Crunchy sauerkraut

Soft avocado

Creamy dressing

This is an all-round scrumptious dish that will leave you feeling satisfied and energised.

Instructions
  1. Make the dressing by putting the tahini in a small bowl and adding the sauerkraut juice. Mix thoroughly.
  2. Then add the lemon juice and mix again.
  3. Add the dried thyme and cilantro and any extra water if needed to create a thin, but creamy consistency.
  4. Grab your favourite bowl and fill the base with your greens, tomatoes, and cilantro.
  5. Then add the sauerkraut and avocado, and dress with the tahini sauce. Garnish with black pepper and extra cilantro.
