Rainbow Rice Paper Rolls
Eat the rainbow and nourish your cells with these fresh and colourful rice paper rolls.

Spicy Miso Sauce
  1. Cut all vegetables into thin strips, tear up the greens and slice the avocado thinly.
  2. Add hot water (not boiling) to a large bowl.
  3. Soak a rice paper roll in the water for about 3 seconds.
  4. Lay it on a plate and add fillings along the side closest to you. Carefully lift this side of the rice paper and gently fold it over the filling. Hold the wrap firmly while you fold in each side of the roll. Continue rolling tightly (like you would a burrito) until sealed.
  5. Mix the sauce ingredients in a bowl and slowly add water. Continue to stir until creamy.
