Today I’m sharing this satisfying, rich tomato sauce recipe. It is another one of my mum’s delicious pasta sauces.

Pasta with a basil tomato sauce is a classic recipe. She has added olives which give it a unique, tasty kick, and extra veggies for added nutrition. I adore the simplicity of this dish and it’s comforting, warming nature – perfect for those chillier days.┬áStir this sauce through your favourite gluten free pasta. Some yummy examples are brown rice pasta or quinoa pasta.

Instructions
  1. Heat a little water in pan and add onions and garlic. Braise for 2 minutes.
  2. Stir in tinned tomatoes, fresh tomatoes, eggplant, zucchini and celery. Cook for 5 minutes.
  3. Add olives and basil and simmer gently until vegetables are cooked.
  4. Adjust consistency of sauce with water or vegetable stock.
  5. Stir sauce through cooked pasta of choice and serve with extra fresh basil.
