I’m a tropical girl! I love the beach, sun, heat, nature, summer and fruit. I love creating fresh, light recipes that make me feel like I’m relaxing on the beach on an island somewhere. This smoothie recipe certainly does that. The bright green colour and delightful sweet taste from the fruit, with a citrus twist, gives it a beautiful tropical feel.

I like to use orange juice as the base for my smoothies. It adds extra flavour and makes them super creamy. Orange juice enhances the beauty of your skin. Drinking orange juice regularly helps to improve skin complexion by slowing down the ageing process and the Vitamin C also prevents free radicals and provides freshness to your skin.

You can replace kale with your favourite greens if you prefer, but I find kale works well with these flavours. Plus it has incredible nutritional value. Kale is high in Vitamin K, A, and C and also has a large amount of copper, manganese, fibre and calcium.

My favourite types of kale leaves are curly and dinosaur. Curly kale has ruffled leaves and a fibrous stalk. It has a lively pungent flavour with lovely bitter peppery qualities. Dinosaur kale is the common name for the kale variety known as Lacinato or Tuscan kale. It features dark blue-green leaves that have a bumpy texture. It has a slightly sweeter and more delicate taste than curly kale.

Instructions
  1. Throw all ingredients in to a blender and blend on high until smooth and creamy.
  2. If necessary, add more water to achieve desired consistency and whizz again.
