Zucchini Noodles with Spicy Chipotle Tomato Sauce

I LOVE ZOODLES! They are so much fun to make and it and you can smother them with your favourite plant based sauces to create a light yet satisfying, healthy dish. My other favourite sauces to have with zoodles are my creamy pesto and pad thai recipes.

Today I bring you a spicy chipotle tomato sauce. What is chipotle I hear you asking? Chipotle is a smoked hot chilli pepper, and this recipes uses the powder, which means the pepper has been dried and ground up. It has a moderate heat with fruity undertones and a BBQ flavour.

Chipotle has many health benefiting nutrients like capsaicin, iron, magnesium, phosphorus, fiber as well as Vitamin A, K, C B6 and potassium.

CANCER PREVENTION: Capsaicin, the organic chemical which gives chipotle peppers their heat, has been linked to cell suicide (apoptosis) in cancerous cells. High levels of capsaicin has been associated with a decrease in the spread of cancerous cells and metastasis.

WEIGHT LOSS: Chipotle is high in Vitamin C and Capsaicin which are essential in the production of carnitine. This stimulates the metabolism of fat in to useful energy in the body and helps you lose weight.

ANTI-INFLAMMATORY: Hot peppers, like chipotle, exhibit anti-inflammatory properties which help with conditions like arthritis and formation of tumours.

IMMUNITY: Chipotle is a rich source of Vitamin C, which helps to scavenge free radicals from the body and reduces your risk of developing conditions like cancer and heart disease.

RESPIRATORY CONDITIONS: Chipotle powder can help relieve stuffy noses and sinus’s. Capsaicin is a powerful in reducing mucus production, which can empty out the airways and sinuses, and also remove the irritants or bacteria that might be causing the respiratory condition in the first place.

This dish is perfect for a light summer lunch or dinner for one person, or a side dish for two people. You can get a little more fancy and add salt and pepper, dried herbs and some garlic if you prefer. Also, if you don’t have a spiraliser you can grab one here.

Instructions
  1. Spiraliser the zucchini's using a vegetable spiraliser. If you don't have one you can also use a vegetable peeler and slice the zucchini in to thin strips.
  2. Lightly pulse the rest of the ingredients until chunky (careful not to over-blend)
  3. Pour the sauce over the zucchini noodles, and wa la!
