What Ingredients Will You Need?
- Kale: This leafy green is nutrient dense and makes the perfect base for all the salad toppings. There are many types of kale, but I recommend using green curly for this recipe if possible.
- Baby spinach: These green leaves have a subtle neutral flavour making them perfect to combine with any salad ingredients.
- Avocado: This will be used to massage into the kale to help soften the leaves and make them easier to digest.
- Lemon: This is used along with the avocado to soften the kale. The acid in the lemon helps even more to break down the cell structure of the kale to make it nice and tender.
- Red onion: They have a nice purple hue and mild sweet flavour. Red onions are my favourite kind of onion to use in a salad.
- Cucumber: This adds a lovely hydrating freshness and crunch to the salad.
- Cauliflower: Roughly chop the cauliflower to bring a gentle, crunchy texture and bright white colour to the dish.
- Strawberries: The star of the dish! Strawberries will bring a vibrant colour to the salad. Make sure you use fresh organic strawberries that are properly ripe to avoid a sour, watery flavour. They should taste rich and sweet.
- Passionfruit: This is one of my secret ingredients to use as a salad dressing. Is there anything easier than scooping out the pulp of fresh passionfruit? It will also bring a sweet and tangy taste to the dish and make the salad nice and juicy.
- Mint: This herb is usually used as a garnish, but we are going to combine it through the entire salad. It will bring a fresh, minty aroma and flavour.
