Zucchini Pasta with Mango Tomato Sauce

This zucchini pasta smothered in a thick and creamy mango tomato sauce is both nutritious and very tasty.

Ingredients
  

  • 2 large zucchini's can use large cucumbers instead
  • 1 cup mango
  • 1 medium tomato
  • 1 small clove garlic
  • 1 big squeeze lemon
  • 1 handful fresh basil
  • 1 tsp curry powder optional
  • 1/4 avocado optional

Instructions
 

  • Spiralise the two zucchini's and set aside
  • Blend the rest of the ingredients and pour over the zucchini pasta
  • Massage the sauce into the pasta with your hands until combined nicely
