Zucchini pasta is a delicious and nutritious alternative to cooked pasta. Although I have nothing against cooked wholegrain or gluten free vegetable pasta (stay away from the processed white stuff!), it is heavy and can leave you feeling a tad bloated. Zucchini on the other hand, is not only full of nutrients like Vitamin A, Vitamin C, potassium, magnesium and manganese, but will leave you feeling light and energised. This dish showcases zucchini in a delicious way while allowing you to experience all of its amazing health benefits.
How to make zucchini pasta
The easiest and best way to make zucchini pasta is by using a spiraliser. Purchase one here if you’re in Australia, or here if you’re in any other country. This handy device turns zucchini, and many other vegetables, into the perfect pasta shape. Using cucumbers is a great substitute for zucchini and my personal favourite. You just need to ensure you use the large green cucumbers, as opposed to the Lebanese ones, as they consist mostly of water and not as much flesh. If you don’t have a vegetable spiraliser and don’t want to buy one, you could use a julienne peeler, or vegetable peeler.

This sauce is a definite keeper! It is luscious, creamy, and the perfect texture to massage into zucchini pasta. If you like a bit of spice, then you’ll love the addition of curry powder. If you want to add a dose of healthy fats to the sauce and make it extra thick, then be sure to blend in avocado.
The only thing with this dish is that it needs to be served and eaten straight away, or at least within thirty minutes or so. Unfortunately, the high water content of all the ingredients means the dish becomes watery fairly fast. Therefore, it’s not a meal you can store and save for later. Ensure to make the amount you’re going to eat.

- 2 large zucchini's can use large cucumbers instead
- 1 cup mango
- 1 medium tomato
- 1 small clove garlic
- 1 big squeeze lemon
- 1 handful fresh basil
- 1 tsp curry powder optional
- 1/4 avocado optional
Instructions
- Spiralise the two zucchini's and set aside
- Blend the rest of the ingredients and pour over the zucchini pasta
- Massage the sauce into the pasta with your hands until combined nicely
